Weekly Obsessions: Coconut Flour Bread

Remember my post with the Paleo English Muffins?

Well, I loved it so much [aka breakfast was the same for a week straight] that I thought it was finally time for me to actually bake up a entire loaf of Paleo Bread this week to change things up [although the English muffins were the most adorable things!].

I’ve seen a lot of different variations when it comes to the decadent Paleo sandwich bread, but the ones that always stick out to me is the ones with the fewest ingredients possible. For a health nut / foodie that loves experimenting in the kitchen, I am actually pretty lazy 85% of the time. I blame my crazy student schedule!

Going Nuttzo

Have you tried Nuttzo nut butters yet?

They are a little bit different from your usual nut butter because it contains a blend of 7 different nuts and seeds – and I personally LOVE the blended flavors of all of the nuts!

Currently, it is available in an Original, Chocolate, and Peanut-Free flavor (in both creamy and crunchy) – offering a pretty standard selection to cover a wide taste palate.

The products boasts of a short ingredient list:
Nuttzo Original 
Ingredient List: Peanuts, Almonds, Cashews, Hazelnuts, Brazil Nuts, Sunflower Seeds, and Flax Seeds.
Nuttzo Chocolate
Ingredient List: Dark Chocolate, Peanuts, Almonds, Cashews, Hazelnuts, Brazil Nuts, Sunflower Seeds, and Flax Seeds.
As you can see from the ingredient list, it is short, simple and to the point – the way nut butters should be. Just nuts, no added oils or sugars. The thing I enjoy about Nuttzo is the benefits of the added flaxseeds, for extra omega 3s! When blended together, the mix of nuts create a very delicate nutty flavor, which I love. Not overtly sweet but just flavorful enough – even with the chocolate flavor! I’m big on texture in foods so the fact that I can still get a little bit of texture from the flaxseeds makes this product even better for me. If you note the ingredient list, the chocolate flavor is made with just the addition of dark chocolate – at only 2 grams of sugar per serving. Who doesn’t want a little dark chocolate every now and then? Sort of reminds me of Nutella, but way less sweet and so much more flavorful.

Nuttzo is also currently 100% organic given the USDA parameters and Non-GMO certified.
The design of the jar is unique in the fact that it is upside down. According to Nuttzo, this helps prevent the oils from being separated. Good for this klutz here, because I have DEFINITELY opened a fresh jar of nut butter and spilled all the natural oils on me before I even take a taste test. Has that happened to you before? [Please say yes]. 
I have previously found Nuttzo at my local Whole Foods for anywhere between $13-18 per jar. Recently, they had a sale on their website, selling jars for just $5! Such a steal. If you haven’t already, I suggest you head on over and stock up!

No bread, no problem

Have you ever seen a more beautiful sight?

I’m definitely not one to advocate cutting anything out of your diet because I personally think that all foods can fit into a healthy lifestyle. But truth is, I have to admit that I’m not too much of a bread eater.

I know, you’re probably looking at me like, ”what is wrong with you because the bread bowls at Panera Bread is a fluffy pillow of heaven” – but I’ve always found myself reaching for other things when I want carbs [like fruit, oatmeal, or a big ole sweet potato]. That, and I’ve always had a sensitive stomach –  so every time I do eat wheat products, my stomach gets a little angry with me. [an upcoming post about my stomach sensitivities coming soon!]

Nonetheless, that has never stopped me from giving my avocado toasts lots of lovin.’ Or a classic banana and almond butter combination. Seriously, is there any better of toast combinations than those?

Easy Toss Together Salad

What do you do when you need to use up a bunch of super ripe produce in your fridge?

Make a batch salad.

There are many variations of this out there, but this is just what I threw together based purely off what I had in my kitchen. The beauty in “cooking” is that you can easily toss anything together and call it today. Which is my kind of cooking! Yes, I’m pretty lazy. But you knew that already.

Carbs are for Cool Kids

Does this mean that I am a cool kid now, since I love carbs?In the mornings, I typically like to start off the day with some type of carbohydrates – whether it is in the form of oatmeal, fruit, or recently – sweet potatoes. This works really well for me personally because I am usually going to a workout right after class. The complex carbohydrates gives me the energy to make it through class and my workout afterwards. It’s easier on my sensitive stomach so I can easily digest it – whereas I’ve found that higher protein breakfasts benefits me best when I refuel after earlier morning workouts.

Generally, people think of having sweet potatoes as a side dish or for dinner, but like I said, I have been loving them for breakfast because they are SO satisfying and filling. I wake up incredibly hungry every single morning, so having a large source of energy coming from carbohydrates is an instant pick me up and makes me feel 1000x better!

It really started with an inspiration from one of my favorite bloggers, Powercakes, with her Banana Peanut Butter Fluff Split. (seriously, I’m in love with every single one of her recipes!) I loved the addition of the peanut flour fluff because one 1/4 cup serving of peanut flour packs in 16grams of protein! For me, this is one of the perfect carbohydrate and protein ratios for a well balanced breakfast.

Peanut Flour Fluff 
(as inspired by Powercakes)–>  1/4 cup peanut flour
–> 3 tbsp water
–> 4 drops liquid stevia
–> extracts (vanilla, maple, coconut, etc.)

 

My version of the banana peanut fluff split. I added a splash of maple extract to the peanut flour fluff for a little maple kick! Goji berries and cacao nibs added for extra vitamins and crunch. And cinnamon, lots and lots of cinnamon!

And then I added different variations of the peanut flour fluff to sweet potatoes, which is actually heaven on earth. Okay, not literally, but you know what I mean!

Also, have you guys had a purple sweet potato before? They’re also known as a Okinawan sweet potato. I love them more than a traditional one – roasting them brings out so much of its natural texture, flavor, and sugars – such a delicious and energizing snack or meal addition! And due to the pretty purple color, they are high in antioxidants as well (higher than blueberries!) Such a win-win combination.

A Shopaholic Takes on Ellie [A Fitness Clothing Company]

Yes, believe it or not I have a life outside of taking pictures of my food.Shocking, no?

But really, I am a complete self proclaimed shopaholic. Fun fact for you guys: I broke a closet shelf the other week in my apartment closet because I had about 30+ pairs of jeans stacked on top in addition to about 50 hangers and 2 shoe organizers. Can’t say I didn’t see that one coming.

Shopping is one of my all time favorite activities. I mean, it doesn’t even have to be for clothing – grocery shopping is included. What’s more fun than browsing aisles of almond butter jars?

Anyways, I digress. [once a foodie, always a foodie.] 

On a day to day basis, you’ll find me in some type of workout wear, only because with my student schedule, I typically am either a) coming from a workout to my classes or b) getting ready to go to a workout after my classes.

And as shopaholic, workout gear is a HUGE obessession of mine. I collect it like a mad woman.

So naturally, my shopaholic radar buzzes through the roof when when Ellie decided to send me an outfit to try.
If you haven’t heard of them before, Ellie is a clothing company specifically designing activewear for ladies – and stylish ones at that!The incredibly unique thing about their clothing is that every month, they have something different and new. In addition to tops, bottoms, and outerwear, they also have accessories as well. I love the variety of clothing they offer because it ranges from workout crops to shorts – so a little bit of everything for everyone!

I am pretty particular about my clothes, and when it comes to workout wear, I like things that are a) high in quality, b) has great fit, and c) is comfortable.

Ellie fits this bill and more -which is very hard to find a company that is a triple threat!

And another thing I found that is really great about the clothing they offer is the price – for the quality you are getting, the price is completely affordable, especially for those of us still in school. Even though I WANT to spend all of my money on clothes, the grown up in me tells me that I still need money for food – and then I remember I like food too, so there’s that. So in this case, you can have your clothes and eat your food too!

First of all, I absolutely LOVE the back detailing on this top. It is unique as it is in the shape of your sports bra – concealing it and creating this beautiful silhouette. I’m such a sucker for detailed backs on tops! The fabric is breathable and I love how it doesn’t bind to you horribly – there’s room to breathe! No one wants to be uncomfortable when they workout.

The balance capris were insanely comfortable. I’m a loyal fan of and really into my Lululemon crops [all hail the Wunder Unders], but these are definitely up there on my favorite workout crops I have tried list. I probably wouldn’t run in these because they lack dry wick, but I can definitely see myself wearing them to yoga. The cotton material makes the bottoms super stretchy and conforms to your shape. In addition, the waist is probably my favorite part about this – the “V” detail is very flattering on your waist area and doesn’t leave the terrible pant imprint line on your stomach [you know what I’m talking about here, ladies!]

I got a small in the top and medium in the bottoms – so I would say it is pretty true to your regular size!
