Last Day of Class Treat: Trader Joe’s Smoked Salmon

And so for the last day of class as an undergraduate last week, I had to celebrate the right way.

With smoked salmon. A la Trader Joe’s, of course.

If you know me at all, you would know that I am not much of a meat or poultry eater. Instead, I’m a big fan of seafood. Salmon, crab, cod, scallops – the works!I prefer my salmon wild caught and either baked, grilled or pan seared, but smoked salmon speaks to me every now and then. I couldn’t resist after passing by it at Trader Joe’s other other week! And TJ has the best prices I’ve seen on smoked salmon – I paid around $5.49 for 4 ounces.

There is something just really delicate about the flavors of avocado and salmon together that I really enjoy. Creamy, smoky and extremely satisfying! Full of heart healthy fats that are also great for your skin – I’m all about it. I paired it with a coconut flour bread I made earlier in the week, and grape tomatoes.

For the remainder of the smoked salmon, I tossed it into an omelet the next morning for breakfast and added some spinach. Broiled grapefruit on the side, of course! Smoked salmon has such  strong flavor that it doesn’t need to be in anything complicated. The simplest flavors are often the best flavors!

An additional thing I love about smoked salmon? No prep needed. Which means that both of these meals took less than 10 minutes to throw together. Time is of importance as I finish up exams for the classes this week!

Edamame and Sweet Pea “Hummus” with Basil

What do you get when you marry my two recent favorite food combinations?

A delicious dip. A delicious chickpea-less hummus!

Well, if I had chickpeas on hand, I would totally add them in, but since I am trying to clean out my fridge before moving out of my apartment, I ditched the chickpeas and this dip resulted. It has the texture of hummus, but with a more of a basil-y, pesto taste. Sometimes the most spontaneous creations are the best creations!

Avocado in my Smoothie

If it is one food that I think I could eat everyday, it would be the avocado. (and I basically do eat it everyday!)

Full of heart healthy fats, the avocado is an excellent source of monounsaturated fatty acids that helps in the absorption of many nutrients and antioxidants – including all of the 25 essential nutrients such as Vitamin A, B, C, E and K! This superfood works wonders for your skin and digestion, since it is chock full of anti-inflammtory properties. I know many people who fear the avocado because of the fat – but good fats such as those found in this delicious fruit are important in maintaing a nutritious diet. The avocado is also chock full of fiber,  which helps you stay full and satiated.

And c’mon, who doesn’t love a good hearty guacamole?In addition to guacamole, avocados can be incorporated into variety of recipes, anywhere ranging from breakfasts to desserts. I know of many people who use it as an oil replacement during baking as well.

Can you believe it? My college graduation is in 2 weeks! As always, I have with me my senior class ring and trusty Ray-Ban aviators as good luck charms. I feel so incredibly blessed to have met as many people as I did and experienced the life Clemson gave me. Time flies when you are having fun and I feel like I’m very familiar with that saying now!

96036612. Trader Joe’s Unsweetened Blueberry Pomegranate Tea 
This tea. I have a huge tea collection but I have been forgoing it for this bottled version. I love the flavor and plus, what’s more satisfying than chugging straight from the bottle?

3. Kiss my Face Pomegranate Acai Moisturizer 
I picked this lotion up from Whole Foods on a whim the other day – but found myself reaching for it all week! Smells great but the scent is not too overpowering – and it moisturizes well without giving that greasy feeling. They also have a peach flavor, which also smells incredible!

4. Dr. Jart Black Label Detox BB Cream
On days I don’t feel like wearing makeup, this is a LIFE SAVER. My skin is very sensitive, so I tend to stick to more natural face products. For those of you unfamiliar with BB creams, or beauty balms, this is basically a one step all in one product – combining a moisturizer, primer, concealer, and SPF all in one. This Dr. Jart BB cream has done wonders for my routine in the morning – and I love how it smooths out my skin! Perfect for every day use.

Have you guys tried the Dark Chocolate Chili almond flavor yet? Sounds strange, but I LOVE the sweet and spicy combination. The Nuts and Spices collection are some of my favorite KIND flavors – at only 5 grams of sugar per bar.

Ask any one of my closest friends and they’ll tell you that I have one of the biggest nail polish collections around. I’m a HUGE fan of Essie and have been eyeing the Spring 2014 collection for quite sometime now. So when I got a package from my beautiful friend Nancy the other week and found this inside, I freaked out! Needless to say, my nails have been happy and coated in Essie this week! Nance, if you are reading this, thank you from the bottom of my heart! You know how to make this girl smile!

Sweet Pea and Red Bell Pepper Cauliflower Rice with Baked Tempeh

Every time I go home during a break from school, I always come back with loads of fresh groceries – all thanks to my generous parents! Growing up, my parents did an incredible job of allowing me to explore in the kitchen and introduced to me at a young age the different varieties of fresh produce available. We had our own garden and I remember my dad bringing in fresh watermelon every summer. Watermelon is good obviously in itself, but oh my goodness, fresh watermelon right from your garden is such a treat! I feel incredibly blessed to have such a strong and supportive family that shares the same interests as I do.

After coming back to school from Easter last weekend, I realized my mom had tucked in a giant head of cauliflower into my grocery bag. I love pretty much all vegetables, but I have always preferred broccoli over cauliflower. Maybe it was because broccoli looked like trees to me, and as a kid and that amused me. Okay, it actually still does! C’mon, I know you’re with me on this one – doesn’t broccoli look like trees?

Weekly Salad Prep: Kale and Mint Salad with a Spicy Tahini Dressing

Well, here I am approaching the end of the semester and counting down the days until summertime – which really this means one thing – making batch salads that I can eat for a week straight!

This week’s salad mix combines my favorite kale variety, the dinosaur kale (aka lacinato kale) and one of my favorite herbs, mint! I really prefer the smoothness of the dinosaur kale for raw salads. Most people recognize kale via the curly kind, but I find that lacinato kale is a little less bitter for eating raw. I prefer eating curly kale cooked, or warmed. Since I also had mini bell peppers and cucumbers on hand, I tossed them in as well. I’m all about cleaning the fridge – hate wasting good produce!
