Ingredients (Serves 6-7)
- ¾ cup Setton Raw Pistachio Kernels finely chopped
- 2 cans (13.5 oz each) full-fat coconut milk
- 3 tbsp matcha powder
- ⅓ cup maple syrup
- Pinch of salt
- ¾ cup chia seeds
- 1 cup yogurt of choice
Toppings:
- Chopped pistachios
- Fresh fruit of your choice
Instructions
- Use a sharp knife to chop pistachios as finely as possible. For a smoother texture, pulse them in a food processor or spice grinder.
- In a large bowl, whisk together coconut milk, matcha powder, maple syrup, and salt until smooth. Stir in the chopped pistachios.
- Stir in chia seeds. Let sit for 10 minutes, stir again to break up clumps, then refrigerate at least 4 hours or overnight until thickened.
- Layer pudding and yogurt in glasses/jars, top with pistachios and fruit.
