What’s for Dinner: April 2018 Edition

 

As much as I love throwing together a new recipe, it’s easy to get into a routine or stuck in a rut for those weeks when life gets BUSY. And for those times where life happens and you just need some default inspiration (that you know will be good), the world of food blogs can be a beautiful thing.

I’ve gathered up a few (EASY!) recipes from some of my personal favorite food blogs to make for the month of April:

1. Kitchen Sink Sunflower Salad – Pinch of Yum

I’m going through a sunflower seed butter phase (i.e. I just bought a fresh jar) and can’t WAIT to make this dressing!

2. Microgreen Watermelon Radish Salad over Oven Baked Salmon – Healthfully Ever After

Leave it up to Carlene to add a seasonal twist to a healthy classic. A delicious and light recipe for any time of the year honestly, but I can’t wait to scout the farmer’s market in a few weeks just so I can pick up local radishes.

3. Creamy Carrot Noodles with Cashew Alfredo – Paleo Gluten Free

Might just be one of the easiest cashew alfredo sauces I’ve seen (7 ingredients!).

4. Curry Yogurt Sauce – Dietitian Debbie

The key to a healthy and fast meal that is also delicious a great SAUCE (see also recipe above!). And I’m going to be making this one from Debbie all month long. Dip it in everything and turn your leftovers into a macro bowl DREAM.

5. Cobb Green Goddess Salad – A Clean Bake 

The most delicious salads are ones with lots of texture and a great dressing – this one is a nice transition from winter to spring/summer, with lots of avocado, sprouts, bacon, and a dreamy green goddess dressing made with tahini (you know how much I like to talk about tahini!).
