Healthy Pistachio Macaroons

These Healthy Pistachio Macaroons are the perfect snack or treat, made with Setton Farms Organic Dry Roasted with Sea Salt Pistachios for a boost of protein and crunch.  Easy to make and naturally sweetened! Did you know? Pistachios are a complete protein, packed with fiber and heart-healthy fats to keep you feeling full and energized! 

Setton Farm’s pistachios are dry roasted, which means there’s never an oily residue – perfect for recipes like this. More easy ways to add more plant protein throughout your day.  

Ingredients:

  • 1 ½ cups unsweetened shredded coconut
  • ½ cup Setton Farms Organic Dry Roasted With Sea Salt Pistachio Kernels 
  • ¼ cup honey (or maple syrup)
  • 2 egg whites
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

Instructions:

  1. Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded coconut, ground pistachios, and sea salt.
  3. In another bowl, whisk egg whites until frothy, then stir in honey and vanilla extract.
  4. Pour wet ingredients into the dry mixture and stir until combined.
  5. Using a small cookie scoop, form 1-inch mounds on the baking sheet.
  6. Bake for 15–18 minutes, until the edges are golden brown.
  7. Let it set on parchment paper, then enjoy!
