Ingredients:
- 1 ½ cups unsweetened shredded coconut
- ½ cup Setton Farms Organic Dry Roasted With Sea Salt Pistachio Kernels
- ¼ cup honey (or maple syrup)
- 2 egg whites
- 1 tsp vanilla extract
- ¼ tsp sea salt
Instructions:
- Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper.
- In a bowl, mix shredded coconut, ground pistachios, and sea salt.
- In another bowl, whisk egg whites until frothy, then stir in honey and vanilla extract.
- Pour wet ingredients into the dry mixture and stir until combined.
- Using a small cookie scoop, form 1-inch mounds on the baking sheet.
- Bake for 15–18 minutes, until the edges are golden brown.
- Let it set on parchment paper, then enjoy!
