Black Bean Fiesta Breakfast Tacos

Start your day with an extra serving of veggies (or two!) with these hearty black bean fiesta breakfast hash tacos with sweet potatoes, brussel sprouts, and red bell pepper!

Although this is suitable for any meal, it’s a great breakfast option for when you want something more savory. I love the spice combination and how versatile it is to work in a variety of different recipes.

 

Black beans are the perfect way to start the day with a plant-based source of protein. You can also make a big batch of this the night before and heat it up in the microwave to serve warm in the morning over your favorite tortillas. Make sure to finish with some avocado slices, fresh cilantro and a squeeze of lime juice!

Ingredients
  1. 1 can BUSH’S Fiesta Black Beans ™
  2. 1 large sweet potato
  3. 1 cup shredded brussels sprouts
  4. 1 red bell pepper
  5. 1 avocado, sliced
  6. 4 corn tortillas
  7. Cilantro, chopped
  8. 2 tbsp olive oil
Instructions
  1. In a non-stick pan or skillet, heat oil over medium heat.
  2. Carefully add sweet potato, brussel sprouts, red bell pepper and cook for 7-8 minutes.
  3. Stir in beans and cook for around 4 minutes, stirring occasionally.
  4. Serve warm over tortillas of choice.
  5. Garnish with sliced avocado slices and cilantro, as desired.
