Ingredients (Serves 2–4):
- 6 Persian cucumbers (or 1 large English cucumber), thinly sliced
- ½ cup Setton Farms Garlic Onion Seasoned Pistachio Kernels, roughly chopped
- ½ cup fresh mint leaves, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoon fresh lemon juice
- Salt and freshly ground black pepper, to taste
Instructions:
- Place the sliced cucumbers in a colander, sprinkle with a pinch of salt, and let them sit for about 10 minutes to draw out excess moisture. Pat dry with a paper towel.
- In a large bowl, combine the cucumbers, chopped pistachios, and mint.
