Pistachio Cucumber Mint Salad

This refreshing Pistachio Cucumber Mint Salad is the crisp, crunchy side your hosting table needs. Made with Setton Farms Garlic Onion Seasoned Pistachio Kernels for a savory, protein-packed crunch, plus fresh mint, lemon, and EVOO – it’s light, bright, and bursting with flavor! Plus, it’s ready in under 15 minutes.

No cooking required, just chill and serve. 

Ingredients (Serves 2–4):

  • 6 Persian cucumbers (or 1 large English cucumber), thinly sliced
  • ½  cup Setton Farms Garlic Onion Seasoned Pistachio Kernels, roughly chopped
  • ½ cup fresh mint leaves, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste​

Instructions:

  1. Place the sliced cucumbers in a colander, sprinkle with a pinch of salt, and let them sit for about 10 minutes to draw out excess moisture. Pat dry with a paper towel.​
  2. In a large bowl, combine the cucumbers, chopped pistachios, and mint.​
  3. Drizzle the olive oil and lemon juice over the mixture. Toss gently to combine.​
  4. Season with salt and freshly ground black pepper to taste. Serve immediately or chill for 10–15 minutes to allow the flavors to meld.​
