Pistachio Matcha Chia Pudding

Pistachio Matcha Chia Parfait, made with Setton Farms Raw Pistachio Kernels. Delicious, nourishing and assembled with whole food ingredients. Pistachios add more than just texture here – they’re packed with plant-based protein, fiber to support digestion, and essential nutrients like magnesium, potassium, and vitamin B6.

They’re also one of the few snacking nuts that offer a complete protein profile, making them a great option whether you are plant-based or just plant curious. 

Ingredients (Serves 6-7)

  • ¾ cup Setton Raw Pistachio Kernels finely chopped
  • 2 cans (13.5 oz each) full-fat coconut milk
  • 3 tbsp matcha powder
  • ⅓ cup maple syrup
  • Pinch of salt
  • ¾ cup chia seeds
  • 1 cup yogurt of choice 

Toppings:

  • Chopped pistachios 
  • Fresh fruit of your choice 

Instructions

  1. Use a sharp knife to chop pistachios as finely as possible. For a smoother texture, pulse them in a food processor or spice grinder.
  2. In a large bowl, whisk together coconut milk, matcha powder, maple syrup, and salt until smooth. Stir in the chopped pistachios.
  3. Stir in chia seeds. Let sit for 10 minutes, stir again to break up clumps, then refrigerate at least 4 hours or overnight until thickened.
  4. Layer pudding and yogurt in glasses/jars, top with pistachios and fruit.
