Roasted Sweet Potatoes with a Pistachio Lime Vinaigrette

 

Ready to elevate your usual roasted sweet potato? You’ve GOT to try this pistachio lime vinaigrette with it – it’s truly amazing paired together. Plus, all of those healthy fats found in pistachios can help your body absorb all of the Vitamin A that’s found in sweet potatoes. A win-win situation overall! 

 
Ingredients:
  • 4 large sweet potatoes, sliced to 1-inch wedges
  • 1 tbsp olive oil +  1/2 tsp each salt and pepper to taste
  • 1/4 cup roasted pistachios, chopped (plus 2 tbsp extra for garnish)
  • 3 tbsp extra virgin olive oil 
  • 1 fresh lime, juiced
  • 1 tsp maple syrup 
  • 2 jalapeños, diced
  • 1 tsp garlic powder (or 1 fresh garlic clove, minced)
  •  salt + pepper to toaste 
  • chopped fresh cilantro, for garnish 
Instructions:
  1. Pre-heat the oven to 425F.
  2. Toss sweet potatoes with olive oil, salt, and pepper.
  3. Roast for 30 minutes until crispy, flipping halfway through at the 15-minute mark. At the end of the 30-minute mark, broil on high for an extra 3 minutes to make the potatoes extra crispy. 
  4. Meanwhile, whisk together extra virgin olive oil, lime juices, jalapeños, garlic powder, salt, and pepper until smooth. Stir in 1/4 cup of pistachios. 
  5. Plate the sweet potatoes and add vinaigrette on top.
  6. Garnish with extra pistachios and fresh cilantro as desired.
