Smoked Salmon Breakfast Pizza

 

Pizza for breakfast? Say no more. I love that this smoked salmon breakfast pizza is like the pizza version of everyone’s favorite smoked salmon / lox bagel. It’s versatile enough that you can swap in different ingredients based on everyone’s dietary needs (for example, use a gluten-free crust for someone with celiac’s or swap pita instead) and you can either make for yourself or serve for a crowd. This looks super intricate but truly, it takes less time than you think. I love smoked salmon as a quick source of protein – no extra cooking needed and it adds so much flavor to everything you are making. 

 
Ingredients:
  • 1 prepared pizza crust of your choice
  • 4 ounces smoked salmon
  • 1/2 avocado, sliced
  • 1/4 cup microgreens
  • 2 mini cucumbers, chopped
  • 1/4 cup thinly sliced red onion
  • 1/4 cup plain greek yogurt + 2 tbsp cream cheese (or whipped cream cheese) of choice
  • 2 tbsp chopped fresh dill
Instructions:
  1. Pre-heat oven and prepare pizza crust according to the specific instructions. Remove from oven and set aside, allowing the crust to cool down.
  2. In a medium bowl, whisk together the cream cheese and greek yogurt until smooth. 
  3. Spread the yogurt/cream cheese mixture evenly on top of the cooled crust. Top with smoked salmon, cucumbers, avocado slices, red onion, and fresh dill. 
  4. Sprinkle with fresh ground black pepper. Slice and serve immediately.
