Crispy Grain-Free Buffalo Chicken Tenders

This is an easy and delicious way to use up that pack of chicken tenders in your fridge! Stock up on these pantry items during your next grocery trip so that you can make this recipe anytime. I love serving this over a crispy salad using this dressing.

Ingredients
  1. 1 lb boneless/skinless chicken tenders
  2. 1 egg + 1 egg white
  3. 1/2 cup almond meal (look for finely ground!)
  4. 1 tsp salt
  5. 1 tsp black pepper
  6. 1/2 tsp garlic powder
  7. 1/3 cup buffalo sauce
Instructions
  1. Preheat oven to 400F.
  2. In a large bowl, combine almond flour and spices.
  3. In a separate bowl, whisk egg + egg white
  4. Dip each chicken tender into the egg, then into the flour mixture until fully coated.
  5. Place chicken tenders in a pre-lined baking sheet with parchment paper and repeat until finished. (tip - use one hand to dip the egg, then the other to coat the flour to avoid clumping the flour!)
  6. Bake in the oven for 15 minutes, then flip.
  7. Bake for an additional 10-12 minutes, or until golden brown.
  8. Remove from oven and toss in a buffalo sauce (pour in a separate bowl to toss so it's even!) before serving.
