Avocado and Sprout Sandwiches with Tempeh “Buns”

Tempeh buns, huns. 

Sorry I just sort of quoted Nicki Manaj. It’s just too damn catchy and it’s been stuck in my head all day after I heard it while trying to fill up my car at the gas station. (Don’t you hate it when that happens?)  Gas station music though. I mean, you go in for gas and leave singing Nick Minaj. My life.

Tempeh is a staple in my weekly grocery trips. For those of you unfamiliar with it, it’s a fermented soy based food (similar to tofu) made by naturally curing soybeans into a vegetarian patty-like block. I know that was probably the most unattractive way to describe tempeh, but the hearty texture is the reason why I love it more than tofu. When you sear it in a pan, it gets all crispy on the outside but stays dense on the inside. And, for every one serving (based off Trader Joe’s Organic 3 Grain Tempeh – my go-to tempeh brand!) it has 20 grams of protein – a great way for both meat eaters and non meat eaters alike to incorporate plant-based protein into their diet.

Spicy Pineapple Citrus Salsa

You know, just still eating citrus over here. Vitamin C game = strong. 

I made this salsa the other day as an easy way to mix up all the citruses I’ve been buying recently. I mean, a girl can only consume so much oranges during the week. I love it so much I ended up remaking a batch and bringing it to a small get together I had this past weekend – and it was a hit! But really, I was just happy to make a dent in the pile of oranges and grapefruits sitting on my kitchen counter.

Friday Favorites. (2/20/15)

Charleston Sunsets. Can you ever really get enough?

Happy Friday! Can you believe that next week is the last week of February? I’m not the type to wish away the days away, but I truth be told I am ready for spring + warmer weather + and picking blueberries from my backyard. You know what I mean?

Until I can share pretty flowers of the Low Country here with you, I’m sharing a few favorite things of the week with you on this beautiful (but slightly chilly) day in Charleston – what kind of shenanigans are you up to this weekend? 

1. This article from Travel and Leisure. Charleston is ranked Number 1 as America’s most romantic cities, and I live here. Currently swooning and you can’t blame me. Come visit me and I promise sure you fall in love in love with with the city too! And I’ll take you to all the eats. Oh, the eats!

2. This Toronto Jacket from Fabletics. Got a whole post dedicated to Fabletics soon. It may give Lululemon a run (fine, a walk) for its Queen Bee status. At work, I still reach for these pants. (pants, but leggings. Classic.)

3. These tempeh strips. Talk about world’s fastest dinner. Just heat up in a pan and then go at it. Also totally makes a great snack (the coconut curry!!). And everything from The Daily. Their house made almond milk is fabulous. OH, and these chocolate covered coconut bites. DROOLING.

4. Currently using (and loving): this shower jelly from LUSH. The first time I used Whoosh I actually laughed out loud because I was having so much fun using it. It foams up so nicely and has such a fragrant (citrus!) smell that leave you nice and energized. And this moisturizer that smells like pomegranate to help with the those winter dry skin blues.

5. Splurge of the week: these flats. The Mini Miller flat is my current everything. In tan, because I’m all over those neutrals.

6. Friday Throwback. Senior Walk basically almost one year ago. Wait, didn’t I just graduate yesterday?

Citrus, Pistachio, and Roasted Vegetable Salad

Aka all I’ve been craving lately.

I love to eat seasonally. And currently, I’m all about the citrus and winter vegetables (i.e. butternut squash and kale sprouts!). I always associate winter with oranges because when I was younger, my mom would give my brother and I both an orange after dinner for “dessert” – and I would only accept during the winter months because that’s when citrus is the sweetest. I’ve always had a selective palate – once a foodie, always a foodie!
