Comparison: The Game I Don’t Want to Play

What happens in 2 months time, may you ask?

I ran the Chicago marathon. (Just your casual 26.2 jog around the neightborhood)
My cousin got married. (Congrats, Rebecca!)
I gave my first business presentation to the Senior Vice President of Technical Operations for United Airlines. (UNREAL!!)
I finished my first class in grad school. (later, Econ!)
Then I registered for my second semester of grad school. (3 semesters to go!)
I got my first flat tire…that I didn’t know how to change. (I know, I’m car incompetent.)
Then I had to fork over major $$$ for all weather tires, which, is a thing in the North. (First world problems…..especially for someone who lived in the South all her life….now I know!)
I met one of my biggest role models, who happens to be a Registered Dietitian. (Jenny Westerkamp, founder of All Access Internships, former dietitian for the Chicago Blackhawks, and current store manager for Kitchfix)

LOL but who else, right? The other day I saw a kale and cauliflower salad at my local Trader Joe’s and knew I had to make my own version. I’m a fan of minimal ingredient lunches that don’t suck and pack well – this fits the bill!

Bring on the food eye candy – our favorite oatmeal and granola company Purely Elizabeth just launched a cookbook!

This is such an incredible milestone for the company and I’m so excited to be celebrating along with you guys. I still remember picking up a bag of the ancient grain oatmeal my senior year of college (which, how is it possible that was 2.5 years ago?) and falling in love with the simplicity of the ingredients. The company’s mission and values aligns so closely with mine – advocating the support for local farmers and educating the community about it. 5 Ingredient Kale Salad, 3 Ways (with Organic Girl)

A dietetic intern’s schedule is no joke, friends. Getting up for a 5am run and then spending all day promoting nutrition education classes around town – just to come back around for my 6:30pm MBA classes. Literally though, what is sleep? What is snack time? What is SLEEP!?

I’d also like you to please turn your attention to your nearest Registered Dietitian and give them a HUGE hug because all that work they put in for you is SO completely underrated. They are by far the hardest workers I know (I’m also 200% bias, being a (dietitian to be) myself…#noshame)

But you know what’s been getting me through these weeks? A new line of juices from Organic Girl!

Happy Monday! It’s a fabulous day over here at Nutrition Happens – I’ve got a special recipe made for you from my beautiful and talented friend, (and Registered Dietitian) Shannan Monson!

Shannan is the owner of Nutrition Simply, an online community she built empowering and inspiring those around her to simply feel good about themselves. (which is what we’re all about here – because good food = good mood!) The moment I connected with Shannan her passion for nutrition reflected across all aspects of her work. She balances work life with family life and every little detail in between so effortlessly – but isn’t afraid to get real with you about it. Her honesty about her struggles with nutrition in the past combined with the extensive knowledge she has today (and love for J.Crew) makes her basically like the ultimate best friend you didn’t know you were missing in your life. My 2015 Summer Refresher: Teaonic Wellness Tea

Happy first day of September! Even though it’s a new month, we’re still holding on to summer for dear life here – Chicago is hitting the 90 degree mark this week!

If you follow me on Snapchat (@nutritionhappen – without the “s”), you’ve definitely seen snaps of my pantry. Basically, half the space in my pantry is devoted to teas. Green teas, white teas – that Australian Bushland tea that I’ve held onto from my vacation in 2011, it’s STILL all there. Ask anyone of my old roommates and they can confirm, that I, May Zhu, am in fact a tea hoarder (how do I not have my own TLC show?). But you know what? No shame. I love teas and I cannot lie!
