Pistachio Rice Treats

A nutritious twist on a classic treat Pistachio Rice Treats! Made with natural sweeteners and a boost of protein and fiber from Setton Farms Raw Pistachio Kernels. Pistachios are one of the highest-protein snacking nuts and loaded with fiber and essential vitamins to make a classic treat like this just a little bit more nutritious. Studies show that eating a combination of protein and fiber together can help  keep you energized. 

Ingredients:

  • 3 cups brown rice crisps cereal 
  • ½ cup Setton Farms Raw Pistachio Kernels,  finely chopped
  • ½ cup almond butter 
  • ⅓ cup maple syrup 
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

Instructions:

  1. In the microwave, warm the almond butter and maple syrup until smooth.
  2. Stir in vanilla extract and sea salt (optional). 
  3. In a large bowl, combine rice crisps and pistachios.
  4. Pour the almond butter mixture over the dry ingredients and mix well.
  5. Press the mixture firmly into a parchment-lined baking dish.
  6. Refrigerate for at least 30 minutes, then cut into squares and enjoy!
