5 Ingredient Kale Salad, 3 Ways (with Organic Girl)

A dietetic intern’s schedule is no joke, friends. Getting up for a 5am run and then spending all day promoting nutrition education classes around town – just to come back around for my 6:30pm MBA classes. Literally though, what is sleep? What is snack time? What is SLEEP!? 

I’d also like you to please turn your attention to your nearest Registered Dietitian and give them a HUGE hug because all that work they put in for you is SO completely underrated. They are by far the hardest workers I know (I’m also 200% bias, being a (dietitian to be) myself…#noshame) 

But you know what’s been getting me through these weeks? A new line of juices from Organic Girl!

This new line of juices features blends that are made with more vegetables and less fruit. I know what some of you are thinking already – “but doesn’t less fruit mean it’s going to taste, like, terrible without the sweetness?” 

IMG_7937Well, my friend, I didn’t say no fruit – just less fruit! These blends are perfectly combined by Organic Girl to have that delicate balance of greens and fruit. To be honest, I prefer my juices less sweet – most of the time I’m really craving a veggie pick me up, since I prefer eating my fruit rather than drinking them. The fruit is subtle but the greens are not overpowering. I’m really loving this line because gives me the exact amount I need (can we talk about that perfectly sized bottle?) without getting green juice hangover. 

And seriously, it’s a dreamy Ingredient list. In the “Lighten Up” blend, you’ll find spinach + lemon + lime + bok choy + honeydew juice – that’s it! It’s probably my favorite blend, with the other one being the “Fuel Your Ride,” which is combination of beets + carrots + kale + spinach + cucumber + parsley. Simple ingredients and packed with nutrients – my kind of juice!

Besides the juices, Organic Girl also has an amazing line of salad dressings. I’m sharing how I use them in 3 different kale salad recipes – each one with only 5 ingredients. Serious game changers and a meal in five minutes – in my life, it’s currently a DREAM situation! 

This line of preservative free and non GMO dressings are made from all organic ingredients. I’ve been putting the lemon agave, fresh tomato Italian, and kale parmesan on rotation – so good! They work perfectly with kale because of the exact ratio of acid (the vinegar) and oil (extra virgin olive oil) to break it down into that perfect, melt in your mouth bite. 

IMG_8006I have a love affair with dino kale (or lacinato kale, if you want to get all technical) but I’ve rekindled my relationship with curly kale, thanks to the Organic Girl dressing – the texture works best in these recipes.

Blueberry Almond with Lemon Agave
Serves 1
Sweet and tangy mixed with fresh blueberries, radishes, and almonds for extra crunch and texture!

  1. 2 cups kale
  2. 1/2 cup sliced radishes
  3. 1/4 cup fresh blueberries
  4. 1 tbsp sliced almonds
  5. 1.5 tbps lemon agave dressing
Instructions
  1. In a bowl, massage kale gently with dressing.
  2. Add in additional ingredients and gently toss.

Tomato and Chickpea with Kale Parmesan
Serves 1
The Kale Parmesan is a savory and flavorful blend - a little bit goes a long way! It compliments mild flavors the best - like grape tomatoes and chickpeas. Pinenuts add brings out the basil and parsley.

Cucumber Cashew with Fresh Tomato Italian
Serves 1
Rethink your traditional tomato italian dressing - and lighten up the flavor with fresh veggies! The fragrant dressing is rich in basil and parmesan - pair it with sundried tomatoes, cucumbers, and cashews for a fun twist!
